In Memory of Dr. Seuss …

Because the girls love the story so much and because Miranda declared that she would not eat them, we decided to make green eggs and ham this morning (recipe follows).

The ham, which turned out a beautiful, deep green, was mostly gone before we even sat down to eat ("Momma, may I have another piece of green ham?") and the eggs (scrambled with cheese) were enjoyed by all.

This may not be the best recipe for this particular breakfast, but I think mine turned out ok.

Green Eggs & Ham

  • 6 large eggs
  • 3/4 cup sharp cheddar cheese, shredded
  • 1 lb ham, thinly sliced
  • 1 tube gel food coloring, green
  • 2 cups water
  • 1/2 cup brown sugar
  • Salt & Pepper to taste

The night before you make the breakfast, place all slices of ham into a sealed plastic container with more food coloring than you think it will take and enough water to cover the slices. Place in refrigerator and leave overnight (at least 8 hours).

The next morning, remove the ham from the green water and place on the side, ready to heat. Take the green water, mix in the brown sugar and place int he microwave for 1-2 minutes.

Whisk all eggs in mixing bowl until integrated. Add as much food coloring as you'd like and whisk until completely mixed. 

Place ham in skillet over medium heat, basting with sugar and green water mixture, until warmed through. Set aside.

Cook eggs in the same skillet by pouring int hte bottom and waiting for the bottom of the egg mixture to set up (apx 3-5 minutes), then spread cheese over the half cooked egg and fold over itself, making a half round encasing the cheese. Then cook, flipping mid-way through, until all egg is cooked and cheese is melty (about 2-5 minutes).

Then serve!
