Oatmeal Chocolate Chip Delight!
Last night, the girls and I decided it was time to make cookies … So, we pulled out the trusty Kitchenaid
and got to work! Although the cookies were good, I was afraid we'd have
no dough left for baking them as the girls were avid cookie dough
eaters and had taken out quite a bit of dough before the first batch
was even in the oven!! (recipe follows)
Oatmeal-Chocolate-Chip Cookies
This recipe is from a 1950's Betty Crocker cookbook (Yes, my favorite
with the entire chapter devoted to frosting!) with a few Hollie-mods
(namely the chocolate chips and some instruction tweaks!).
- 1/4 C sugar
6 T butter
1/4 C light molasses
2 eggs
1 3/4 flour
1 tsp cinnamon
1 tsp salt
1 tsp soda
- 2 C quick-cooking rolled oats
- 1 C chocolate chips (I used semi-sweet, and more than a cup … but any will do)
1/2 C chopped nuts (optional)
- Mix all ingredients in the order listed except oats, chips and nuts until well combined.
Stir in the remaining ingredients.
- Drop by teaspoons on nonstick baking sheet.
Bake 375° F until turning gold at the edges (about 11-12 minutes).
Notes:
- If you must use regular oats, let the batter sit, refrigerated, for several hours or overnight before baking.
- This recipe is very tolerant of customizations, like using a different type of baking
chip, like white chocolate, milk chocolate or butterscotch chips, or
increasing the amount of chocolate (I usually use a whole bag of chips,
not a cup!)
